Ingredients

1. 1 packet Pasta
2. 2 cups mixed cheese
3. 1 cup chopped carrots
4. 1 cup chopped zucchini
5. 1 cup yellow squash
6. 1 1/2 cup mixed peppers, red, yellow, green
7. 1 cup diced fresh tomatoes
8. 1 head of broccoli
9. 1 can crushed tomatoes
10. 1 cup parsley
11. 2 tablespoon dried oregano
12. 1/2 cup fresh basil
13. 1 teaspoon dried oregano
14. 4 tablespoon olive oil

Directions

1. In a pan put 4 tbsp olive oil, heat the oil
2. Add 1 tsp dried oregano and 1/2 tsp black pepper
3. Add the yellow squash, carrots, zucchini and broccoli
4. Mix together and add 2 tsp salt
5. Keep mixing and cook for about 5 minutes
6. Add the can of crushed tomatoes and fresh diced tomatoes
7. Mix together and leave on low heat for 5 minutes
8. Take off the heat and put in a bowl
9. Add the pasta, mixed peppers, parsley, basil and fresh oregano to the vegetables and mix well together
10. Transfer to a baking dish
11. Drizzle a little olive oil over the top
12. Sprinkle the cheese on top
13. Bake for 15 minutes at 400 degrees
