Ingredients
1small butternut squash or half of large
½cupshredded white cabbage
115.5 oz chickpeas or garbanzos can - drained and rinsed
114 oz diced tomatoes can
1tablespoonolive oil
2teaspoonfresh grated ginger
1teaspooncumin powder
2teaspooncoriander powder
1teaspooncinnamon powder
2cupswater
1teaspoonsalt
1/4teaspoonblack pepper
Directions
Peel butternut squash and dice in 1 inch cubes
Heat a heavy bottom saucepan
Add oil, cabbage and sauté for 2 minutes
Add ginger, cumin powder, coriander powder, cinnamon powder and sauté and stir until slightly brown.
Add can of tomatoes with the juice, chickpeas and finally the cubed butternut squash
Mix well
Add 2 cups water, salt and black pepper. Mix thoroughly
Cover pan and simmer for 1/2 an hour, stirring every 10 mins
Serve hot with couscous or rice
Garnish with chopped fresh coriander leaves and drizzle with lemon juice
