Ingredients
14oz can coconut milk
1cupchopped mushrooms
1small chopped fennel bulb
1large chopped red pepper
2tablespoonchopped basil
4large plum tomatoes chopped
2small pak choi
2cupsshredded red cabbage
2cupsshredded green cabbage
8oz tofu cut into small pieces
1 ½teaspoonfinely grated fresh ginger
1/4cupsoya sauce
1/8teaspoonasafoetida
Salt to taste
½teaspoonchili powder
1 ½teaspooncurry powder
1teaspoonbrown sugar
Directions
Heat a large deep wok or Dutch oven
Add coconut milk, mushroom, fennel, red peppers, peanut oil, peanut butter, tomatoes, red cabbage, green cabbage, tofu, and the rest of the ingredients, adding the pak choi and basil at the end
