Ingredients
For Calzone dough
1½cup all-purpose flour (unbleached)
Pinch of Salt
1½teaspoon Yeast (dissolved)
1teaspoon olive oil
1cup water
For Calzone Filling
1cup finely chopped broccoli
1cup finely chopped zucchini
½cup thinly sliced black olives
½cup finely chopped red & green bell peppers
1tablespoon oil
Italian mixed seasoning
1tablespoon red crushed chilli flakes
white seasame seeds
1¼teaspoon salt
1cup shredded mozzarella & parmesan cheese
1cup shredded cheddar cheese
Directions
For Calzone dough
In a bowl, add the all-purpose flour, salt, yeast and olive oil. Mix the ingredients together then add the water little by little until you form dough using your fingers and hand (tip: the dough shouldn’t stick to your hand or bowl).
Take the dough out, spread some oil around the bowl; place the dough back in the container and cover it with a napkin. Leave the bowl a side for 30minutes to let it rise.
For the filling
Heat the pan in a medium-high heat and add oil to the heated pan. Add red crushed chilli flakes to the pan and let the heat the chilli to heat a bit.
Add chopped broccoli, bell peppers, zucchini and salt. Sautéed the vegetable for few seconds and let it cool for few minutes.
Once the vegetables are cooled down, combine all the cheeses and sliced olives to the vegetable and mix it gently.
For preparing Calzone
Take the dough mixture and punch the air out from the dough. Make 12 small equal size balls from the dough (by cutting them into 12 different equal pieces).
Roll the small dough ball on a flat surface by sprinkling some flour (to avoid the dough sticking to the surface) until it’s a disc shape (flat round shape).
Add one table spoon full of calzone filling in the middle of the rolled dough.
Spread some water around the edge of the rolled dough and close the dough into half round shape (ensure all the sides are closed nicely by pressing it using your fingers except the folded side).
Once closed using a fork press the half circle edges to create a nice look.
Using a brush, gently brush the top of the calzone to make it bit wet and sprinkle some sesame seeds on the top.
In an oven baking tray, spray and spread some oil and place these calzone in a row. Once you finish making all the calzones, cover the tray using a light towel and leave it for 15 -20 minutes to rise.
While the calzone dough is rising, preheat the oven at 375°F (190°C).
Place the tray in the oven and bake until the calzone is golden brown colour.
