Ingredients
1cuplentils (soaked for 2 hrs) in 2 cups of water
1cupdiced pumpkin
½can coconut milk
½cupchopped fresh mint leaves
1tablespoonfreshly grated ginger
¼teaspooncumin powder
¼teaspoonturmeric powder
1teaspooncoriander powder
½teaspooncurry powder
2tablespoonoil
2tablespoonfreshly chopped coriander for garnish
Directions
Heat a saucepan on medium flame
Add oil, cumin powder, curry powder, ginger paste and saute for 1/2 min
Add pumpkin, coriander powder, turmeric powder and saute for 1 min
Add soaked lentils, stir gently, cover pan and cook for 5 mins
Add salt, coconut milk, mint, stir gently, cook for further 3 mins
Garnish with fresh coriander. Serve hot with chapati or rice
